

Delicious pork chops marinated in a kosher salt brine, then sauteed in sherry wine, caramelized onions and sauteed mushrooms. Very, very comforting.
Stewed tomatoes with thinly sliced zucchini squash, sauteed in olive oil and garlic and lightly seasoned. It brought me back to my childhood. I remembered my mother making a similar dish when I was a kid. I think hers also involved yellow squash. Somewhat like a ratatouille.
Hearty brown rice touched with some of the sherry and onions.
Yum.
Tonight Charlotte cooked for us. Wow, what a meal.
Parmesan panko crusted wild sea-bass (caught fresh by her landlord!) with a light pesto coating. So fresh, so mouth-watering. Soo good!
Fresh string beans almondine. What a great idea! The way the slivered almonds complimented the not only the beans, but the pesto as well! Made with just a touch of butter.
And my favorite: Roasted rosemary red potatoes. Cooked to perfection. The way they melted in my mouth!
Raspberry sorbet for dessert.
